– 1 lb (450g) of plantains, peeled and cut into chunks
– 1 lb (450g) of yuca, peeled and cut into chunks
– 1 lb (450g) of cassava, peeled and cut into chunks
– 1 lb (450g) of malanga, peeled and cut into chunks
– 1 lb (450g) of red beans, soaked overnight
– 1 lb (450g) of white beans, soaked overnight
– 1 lb (450g) of yautia, peeled and cut into chunks (optional)
– 1 large onion, finely chopped
– 3 cloves of garlic, minced
– 1 bell pepper, chopped
– 1 can of tomato sauce
– 1 can of coconut milk
– 1 cup of vinegar
– 1 teaspoon of sazón (seasoning mix)
– 1 teaspoon of cumin
– 1 teaspoon of oregano
– Salt and pepper to taste
– Vegetable oil for frying

Preparation

1. Rinse the red beans and white beans under cold water, then soak them overnight. Drain and rinse them again before cooking.
2. In a large pot, bring 4 cups of water to a boil. Add the soaked beans and cook until they are tender. This may take about 30-45 minutes. Season with salt and pepper to taste.
3. While the beans are cooking, prepare the meat. In a separate pot, bring enough water to cover the meat. Add the beef, chicken, pork, and sausage. Season with salt and pepper. Bring to a boil, then reduce the heat and simmer for about 20 minutes. Drain and set aside.
4. In a large skillet, heat vegetable oil over medium-high heat. Add the chopped onion and garlic, and sauté until they are golden brown. Add the bell pepper, and sauté for another 2 minutes.
