Fish biryani is a mouthwatering and aromatic dish that combines the succulence of fish with the rich flavors of spices and rice. Ingredients:

Before you start cooking, gather the following ingredients:

– 500g of fresh fish (such as basa, catfish, or tilapia), cut into bite-sized pieces
– 1 cup of basmati rice
– 1 large onion, thinly sliced
– 3 tomatoes, finely chopped
– 2 green chilies, slit
– 1 teaspoon of ginger-garlic paste
– 1 teaspoon of cumin seeds
– 1 teaspoon of coriander seeds
– 1 teaspoon of fennel seeds
– 1 teaspoon of cardamom pods
– 1 teaspoon of cloves
– 1 teaspoon of bay leaves
– 1 teaspoon of turmeric powder
– 1 teaspoon of red chili powder
– 1 teaspoon of garam masala
– 2 tablespoons of oil
– Salt to taste
– Fresh coriander leaves for garnishing

Preparation:

1. Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for about 30 minutes.
2. In a large pot, bring 4 cups of water to a boil. Add a pinch of salt and the soaked rice. Cook the rice until it’s almost done but still firm to the bite. Drain the rice and set it aside.
3. While the rice is cooking, prepare the fish. Marinate the fish pieces with salt, turmeric powder, and a little bit of ginger-garlic paste. Keep them aside for about 15 minutes.
4. In a separate pan, heat the oil over medium heat. Add the cumin seeds, coriander seeds, fennel seeds, cardamom pods, cloves, and bay leaves. Once the seeds start to crackle, add the sliced onions and sauté until they turn golden brown.

7. In a large, deep-bottomed pan, spread a layer of cooked rice at the bottom. Add half of the cooked fish mixture on top of the rice. Sprinkle half of the garam masala and red chili powder over the fish.
8. Repeat the layers, finishing with a layer of rice on top. Press down gently to ensure the layers are well-combined.
9. Cover the pan with a tight-fitting lid and cook over low heat for about 15-20 minutes. Turn off the heat and let the biryani sit for another 10 minutes.
